Ingredients
- 1/4 cup Bell Pepper Mix (yellow, red, green) roughly chopped
- 7-8 flowerets of Broccoli
- 1tbsp Sweet Corn
- 5-6 Mushrooms, chopped
- 1/4 cup Carrots, chopped
- 2 medium-sized Onions
- 1tsp Ginger-Garlic paste
- 1-2 Green Chilies, finely chopped
- Salt to taste
- Black pepper to taste
- 4-5 Baby Corns, cut into slits
- 1/2 tsp Oregano
- 1tsp Soy Sauce
- 1tsp Oil
Procedure:
- In a pan, heat some oil.
- Add chopped onions, stir them for a while till onions turn translucent, now add ginger-garlic paste, cook it till the onions turn a little brown.
- Add bell peppers, cook for a minute or two.
- Add sweet corns, carrots, baby corns stir on a high flame for 2mins. Now add mushrooms, and stir for another 1-2mins.
- Now add salt, black pepper, oregano and soy sauce and add 1/4 cup water, cover it with a lid and cook for another 10mins or till the vegetables are soft and cooked.
- Stir well. Serve hot.
Raita
Ingredients
- 200gm curd
- 1/4 cup cucumber, chopped
- 1 small sizes onion
- 1 small sized tomato
- 1 green chilly, finely chopped
- Few coriander leaves, chopped
- Pudina powder
- Roasted cumin powder
- Garam masala
Procedure:
- In a bowl, add the curd(hung, optional), cucumber, onion, tomato, chilly, a pinch or two of salt, pudina powder, roasted cumin powder, garam masala. Give the raita a good mix, so that all the spices are mixed wholly. Garnish with some fresh coriander leaves, chopped. Serve chill.
Quinoa Pulao
Ingredients
- 1/2 cup quinoa
- 1/2 medium sized onions
- 1tsp ginger garlic paste
- 1 green chilly, finely chopped
- 1/2 carrot, chopped
- 7-8 beans, chopped
- Salt
- Black Pepper
- Oil
Procedure:
- Soak the quinoa for 5-10mins before using.
- Now, in a different pan, heat some oil.
- Add onion, cook for a while.
- Add ginger garlic paste, green chilly and cook it for another 1 minute.
- Now, add carrots, beans, salt and black pepper. Stir for a while so the veggies are cooked.
- Now add 1 cup water, add quinoa after washing under water.
- Put the lid on for pressure cooker and whistle it for 3-4 times.
- Open it and serve hot.
Vegetable Soup
Ingredients
- ¼ cup Ghiya
- 4 large Tomatoes
- A handful of Beans slits
- 1 medium size Onion, finely chopped
- ¼ cup Bell Peppers
- 5-6 Mushrooms, chopped
- 1 fistful Sweet Corn
- 1tsp ginger-garlic paste
- 1tsp Oil
Procedure:
- Boil tomatoes, beans, and ghiya together with half a cup water in a pressure cooker, whistle it for 2-4 times.
- After boiling, with a help of the blender, blend it into a thick consistency paste. Keep aside.
For the soup:
- Now, in a different pan, heat the oil.
- Add onions, stir for a while till the onion becomes translucent.
- Now add ginger-garlic paste and roast a little.
- Add bell peppers and corns and stir for while till the vegetables are roasted and soft.
- Now add mushrooms and stir on high flame for about a minute.
- Add the broth and water as per your need and consistency.
- Stir well, give it a boil for two.
- Garnish it with fresh coriander leaves. Serve hot.
